Many asian and nonya recipes call for pandan extract or pandan juice as an ingredient. This is not available for purchase anywhere and has to be made fresh at home. Here’s how you can make your pandan extract / juice:
- Blitz / blend 100g pandan leaves (washed and thick stem cut off) in 30ml water. Add more water in small amounts if necessary, but avoid adding too much water as that dilutes the extract.
- Transfer the blended pandan leaves into a muslin cloth or coffee sock.
- Squeeze as hard as you can to extract out as much juice as possible. This should yield about 30-60ml of juice, depending on how dry your leaves are and how much water you had added during the blending / blitzing.
