BBQ Pork Ribs
Everyone loves a tasty, succulent, juicy and fall off the bone BBQ pork ribs. I came across this recipe from InspiredTaste and made a few mods of my own to better suit my tastes. Instructions
Season the meat overnight

- Prepare the pork ribs as instructed in my post Preparing pork ribs for roasting and grilling if the membrane at the back of the ribs has not be removed.
- Rub the salt, pepper(s), paprika and garlic powder generously to cover every part of the meat including the sides and back.
- Hang the ribs to air dry for at least one hour.
- Place ribs on a dish, meat side up, and let it season overnight.
Slow grill the ribs

- Preheat oven to 140C.
Remove ribs from the fridge at least 30 minutes prior to grilling so that its not cold on the insides. - Line the bottom of a roasting pan with aluminum foil to catch oils and gravy (and to prevent you the hard work of scrubbing your baking pans afterwards).
- Place the ribs meat side up on the roasting pan. Cut the ribs into smaller sections if u need to fit them into the pan.
- Cover the top of the ribs loosely with aluminum foil.
- Grill in the middle of the oven for 2 hours.
- Preheat oven to 140C.
Prepare the BBQ sauce with thermomix

- Sautee the onions with the cooking oil at 4 min / Varoma / speed 1.
- Sautee the ground cumin, garlic and chili for 2 min / Varoma / speed 1.
- Add in the rest of the ingredients and simmer at 30 min / 98C /speed 1.
Apply sauce on the ribs

- Remove ribs from the oven after the 2 hour grilling.
- Pre heat oven at 200C.
- Discard the foil covering the ribs.
- Apply the BBQ sauce generously on all sides of the ribs.
- Broil the ribs meat side down for 5 minutes in the middle of the oven
- Apply a second layer of sauce all around on the ribs.
- Broil the ribs meat side up for 5 minutes or until the sauce just starts to caramelize. Keep a close watch on the ribs. Be careful not to let it char and burn.
- Remove the ribs from the oven and apply a final layer of sauce on the ribs if desired.
- Serve.
Cooking the sauce (non thermomix)

- Sautee the onions with the cooking oil at high heat for 4 minutes, or until translucent.
- Add in the the ground cumin, garlic and chili and sautee for 2 min.
- Reduce to medium heat. Add in the rest of the ingredients and simmer for 30 min, stirring occasionally to prevent the bottom from burning.
Cooking the meat over a BBQ grill

- BBQ the seasoned ribs for 30-45 minutes under medium heat (or not so hot area of the pit), turning once.
- Apply a generous layer of the sauce all over the grilled meat and grill the meat in the hottest part of the BBQ grill for 5 minutes on both sides.
The meat may not be as tender as the oven slow grill but will have a smokier flavour due to the wood fire. If time permits, wrap the meat in a thin layer of aluminum foil the BBQ the wrapped meat for 1-1.5 hours. Thereafter, follow step 2 to complete the grilling.
