Description

Here, I will show you how to make garam masala for your Indian dishes if you're unable to buy the ready made ones. You can either use an electric grinder or the Thermomix to grind them into a powder. This should make enough garam masala to last you for 6-12 months.

Ingredients
  • 75 g cumin seeds
  • 40 g coriander seeds
  • 20 g black cardamom pods
  • 20 g green cardamom pods
  • 20 g black peppercorn
  • 25 g fennel seeds
  • 10 g cloves
  • 20 g cinnamon sticks
  • 10 g nutmeg whole
Instructions
    Roast the spices
    1. Pre-heat toaster oven, griller or oven at 170C.
    2. Lay the spices on a baking sheet in a single layer. Roast the spices for 10-15 minutes until dry and fragrant. You may need to toast some longer if the pieces are big.
    3. If using a thermomix, roast the ingredients for 10 minutes at Varoma / speed 1.
  1. Combine the spices and grind to powder
    1. Mill the spices in a grinder at high speed until a fine powder is obtained.
    2. If using Thermomix, mill the spices at speed 9, 2 minutes(or less if a fine powder is already obtained before 2 minutes).
