- Flip crabs upside down. With one swift motion downwards, pierce the belly of the crab nearer the eyes with the sharp corner nearer the cleaver’s handle.

Remove the crab shell. Split the crab into 2 halves from the belly. Remove the gills and insides. Scrub the shell with a clean toothbrush.

Split each half into 2 by separating the claw and the legs. Wash away the dirty innards stuck on the inside of the crab shell. Arrange the parts neatly on the steaming plate.

Beat the egg whites with a pinch of salt. Arrange the julienned chili and ginger shreds on the crabs evenly. Sprinkle some white pepper on the crabs for taste. Spread the beaten egg white on top of the crabs.

Steam the crabs for 10-15 minutes (you can smell the fragrance of the crabs when they’re done). While steaming the crabs, drain the water from the garnishes in preparation.

Garnish with chili, spring onion flowers and chinese coriander.Serve hot and steamy!
