BBQ Pork Ribs

Description

Everyone loves a tasty, succulent, juicy and fall off the bone BBQ pork ribs. I came across this recipe from InspiredTaste and made a few mods of my own to better suit my tastes. To learn how to prepare the ribs beforehand, please refer to this post on how to prepare your pork ribs for grilling and roasting.

Ingredients

Meat

1.5 kg baby back ribs (can replace with prime ribs but be sure to choose fattier cuts as the fats help to keep the meat juicy after grilling)
2 tsp salt (for seasoning the meat)
4 dash ground black pepper
garlic powder (generous)
2 dash white pepper (optional)
4 dash smoked paprika (for the smoky taste and colour, optional)

BBQ Sauce

1 tbsp cooking oil
0.5 large yellow onion, minced
1 clove garlic, minced
o,5 tsp ground cumin
8 tbsp ketchup
2 tbsp brown sugar or dark molasses (can replace with raw sugar)
1 tbsp apple cider vinegar (can replace with balsamic vinegar)
1 tbsp chilli sauce or gochujang (optional)
1 red chilli padi (bird's eye chilli), finely minced (optional)

Instructions

Season the meat overnight

1. Prepare the pork ribs as instructed in my post Preparing pork ribs for roasting and grilling if the membrane at the back of the ribs has not be removed.
2. Rub the salt, pepper(s), paprika and garlic powder generously to cover every part of the meat including the sides and back.
3. Hang the ribs to air dry for at least one hour.
4. Place ribs on a dish, meat side up, and let it season overnight.

Slow grill the ribs

1. Preheat oven to 140C.
  Remove ribs from the fridge at least 30 minutes prior to grilling so that its not cold on the insides.
2. Line the bottom of a roasting pan with aluminum foil to catch oils and gravy (and to prevent you the hard work of scrubbing your baking pans afterwards).
3. Place the ribs meat side up on the roasting pan. Cut the ribs into smaller sections if u need to fit them into the pan.
4. Cover the top of the ribs loosely with aluminum foil.
5. Grill in the middle of the oven for 2 hours.

Prepare the BBQ sauce with thermomix

1. Sautee the onions with the cooking oil at 4 min / Varoma / speed 1.
2. Sautee the ground cumin, garlic and chili for 2 min / Varoma / speed 1.
3. Add in the rest of the ingredients and simmer at 30 min / 98C /speed 1.

Apply sauce on the ribs

1. Remove ribs from the oven after the 2 hour grilling.
2. Pre heat oven at 200C.
3. Discard the foil covering the ribs.
4. Apply the BBQ sauce generously on all sides of the ribs.
5. Broil the ribs meat side down for 5 minutes in the middle of the oven
6. Apply a second layer of sauce all around on the ribs.
7. Broil the ribs meat side up for 5 minutes or until the sauce just starts to caramelize. Keep a close watch on the ribs. Be careful not to let it char and burn.
8. Remove the ribs from the oven and apply a final layer of sauce on the ribs if desired.
9. Serve.

Cooking the sauce (non thermomix)

1. Sautee the onions with the cooking oil at high heat for 4 minutes, or until translucent.
2. Add in the the ground cumin, garlic and chili and sautee for 2 min.
3. Reduce to medium heat. Add in the rest of the ingredients and simmer for 30 min, stirring occasionally to prevent the bottom from burning.

Cooking the meat over a BBQ grill

1. BBQ the seasoned ribs for 30-45 minutes under medium heat (or not so hot area of the pit), turning once.
2. Apply a generous layer of the sauce all over the grilled meat and grill the meat in the hottest part of the BBQ grill for 5 minutes on both sides.
The meat may not be as tender as the oven slow grill but will have a smokier flavour due to the wood fire. If time permits, wrap the meat in a thin layer of aluminum foil the BBQ the wrapped meat for 1-1.5 hours. Thereafter, follow step 2 to complete the grilling.
